杏仁糊 / Almond Cream
Soak the apricot seeds in water over night.
Soak rice in water over night in another bowl.
Strain the rice.
Blend in blender with 2 cups of water till all the rice has been nicely pulverized.
Transfer into pot. Cook on low heat for 20 minutes. Stir continuously till it becomes a smooth paste.
Strain paste. Set aside.
Strain apricot seeds.
Blend in blender with 2 cups of water till you have fine texture.
Transfer to pot and cook for 10 minutes till it simmers. Low heat.
Strain and then back to pot at least THREE times. If you have cheesecloth, use it!
Throw in the rock sugar.
Suggestion: do not throw in all the rock sugar at once. Adjust it accordingly to your own desired level of sweetness.
When it is boiling, throw back the rice paste (from Step 5).
Cook at low heat till desired consistency.
