15 Minute Broccoli Soup

Preparations

  1. Step 1

    Chop the broccoli into small pieces - they will cook faster like that. We don't want much of the stalk, so cut that away. Put the pieces in boiling water and cover. Boil for 3 minutes until just tender.

  2. Step 2

    Remove broccoli from the water with tongs and place into a blender cup. Leave the water bubbling away on a low heat. In the blender, blend until smooth (you will need a good hand blender - cheap ones are often not powerful enough to make a smooth puree).

  3. Step 3

    You'll have a thick broccoli puree. Now you just need to add enough water to bring it to a soup consistency. The number one tip for this is to do it bit by bit - if you try to do it all at once you risk adding too much... and there's no going back from that! So bit by bit, add a little water from the pan, blend, add a little water, blend... until you have the consistency you want. It shouldn't be too watery.

  4. Step 4

    Add the olive oil and blend. Add the salt and pepper to taste and blend - again, best to do this part bit by bit! Now you're done - serve it in a bowl with some bread on the side :)
