My late Peranakan granny used to make this soup very often. So to me, this is the ultimate comfort food. :) P.S> Corn's optional, I was merely trying to get rid of the lonely fella hibernating in mah fridge.
- Chicken ribs (Small pc)
- Onion (1 no)
- Potato (1 no)
- Carrot (half )
- Corn (optional) (1 no)
- Salt (pinch)
- Pepper (pinch)
- Oil (1 teaspoon)
Cut up the carrots in chunky pieces.
Same for the potato - chunky pieces as well.
Cut the corn in pieces as shown above.
Slice the onions.
Blanch the chicken ribs with hot water first.
Get ready a pot of water.
When its boiling, dump the chicken ribs & sliced onions.
In goes ALL the rest of the ingredients.
A teaspoon of oil. (I'm using soya oil.) & salt & pepper to taste.
Simmer on low heat for ONE hour.
When it's ready, serve!
I had leftover macaroni, so this was my lunch! :)
