Adzuki Pound Cake
Sweet adzuki beans add a interesting accent to your everyday pound cake! You should be able to find cooked adzuki beans (sweet red beans) sold in cans.
- Flour (cake flour) (100 g)
- Baking powder (2 tsp)
- Egg (M size) (2 eggs)
- Sugar (100 g)
- Unsalted butter (100 g)
- Adzuki beans, pre-boiled (150 g)
Grease a pound cake pan with butter (separate from the butter in ingredients list) and set aside. Sift flour into a bowl and chill in the refrigerator. Preheat oven to 180C/350F.
Let the eggs sit out until they reach room temperature. Melt butter in microwave. Mix baking powder into the flour.
Beat eggs well using a hand mixer or whisk, then add sugar and continue beating until thick and smooth.
Add in melted butter little by little (to prevent from separating), mixing well.
Next, add in the flour, give a brief stir to combine and then mix in the adzuki beans.
Pour into the pound cake pan (about 80% to the top of pan). Flatten out the batter using a scraper or other spatula (this helps the pound cake bake into a nice shape!). Stick in the oven and bake for 45-50 minutes.
