Almond Snow Balls
Recipe is taken from "Okashi" by Keiko Ishida. I'd initially wanted to make these because I'd wanted to get rid of the ground almond as I was sick of making macarons! Then I'd realised that hey, these make excellent Chinese New Year yummies too! This yields about 45 snow balls.
- Cake flour (75 g)
- Plain flour (75 g)
- Unsalted butter (softened) (120 g)
- Icing sugar (50 g + some for dusting)
- Salt (a pinch)
- Vanilla extract (Half tsp)
- Ground almonds (50 g)
Sift the plain flour + the cake flour together into a bowl. Set aside first.
Beat butter, sugar, salt & vanilla extract till softened.
When it's soft, fold the flour & almonds into the mixture.
It should look like this after folding.
Cover with plastic wrap.
Into the fridge for 20 mins.
After 20 mins, weigh 8 grams of dough and roll it into a small ball.
Place the balls in alternating rows.
Into oven. Temp 160 degrees. 20 mins.
Out of oven. Cool them.
Dust with icing sugar once the cookies are cooled!
