Ancho Chile Dark Chocolate Cupcakes with Chile Cream Cheese Frosting

How to Prepare

    Pre-heat oven to 350 degrees Fahrenheit

    Combine boiling water with baking cocoa in a small bowl and mix until cocoa has fully dissolved.

    In a medium bowl combine flour, baking soda, baking powder, salt, ancho chile powder and cayenne pepper powder.

    In yet another bowl, cream butter while gradually adding the sugar. Once sugar is fully blended, mix in vanilla and egg until fully mixed.

    Slowly mix alternating parts of the flour mix and the chocolate sauce into the butter sugar bowl until batter is fully blended.

    Pour batter into non-stick cupcake tins (use cupcake papers if necessary). Bake for 15-20 minutes. Cupcakes are done when a you put a toothpick in the center of the cake and it comes out clean.

    For the frosting, sift sugar and spices together. Mix in cream cheese and butter until frosting is well blended and smooth. Add the vanilla last.

    Spread frosting on cooled cupcakes and top with one dried chile. Enjoy!
