One of my favorite salad recipes. The dressing mixes wonderfully with the fresh avocados and tomatoes, while the mixed beans give the salad a little texture and make it even more healthy. Vegan approved.
- avocado (2)
- cherry tomatoes (10)
- mixed beans (1 small can)
- grain mustard (2 tbsp)
- lemon juice (1 tbsp)
- garlic powder (half teaspoon)
- olive oil (1 tbsp)
- honey (1/2 tbsp)
Cut the avocado into half-inch chunks (don't mash)
Add a small can of mixed beans
cut the mini tomatoes in half, add to the avocado and beans
in a separate bowl mix the lemon juice, garlic powder, olive oil, good quality grainy mustard, and honey and mix. add salt and peppe to suit your taste
definitely use good mustard for this, it makes a difference
pour dressing over avocado/bean/tomatoes and mix with a wooden spoon. enjoy :)
