Bacon-wrapped Asparagus Rolls

Bundles of asparagus rolled up in slices of bacon and topped with a luxurious Gorgonzola cheese sauce. Goes great with wine! Also, works well for packed lunches. Original recipe: http://cookpad.com/recipe/1630197
- Thinly sliced bacon (4 slices)
- Asparagus (4 spears)
- Champignon mushrooms (40g)
- Sliced garlic (1 small clove)
- Bay leaf (1)
- Fresh rosemary (10cm sprig)
- Cherry tomatoes (5)
- Salt & pepper (to taste)
- White wine (1 Tbsp)
- Olive oil (as needed)
- Dill ( for garnish)
- Gorgonzola cheese (30g)
- Shredded cheese (mozzarella, etc., 30g)
- Cream (3 Tbsp)
- Salt & pepper (as needed )
How to Prepare
Cut the Gorgonzola in thin slices, halve the cherry tomatoes, and thinly slice mushrooms.
Parboil asparagus (about 2 minutes), cut each spear in half, then wrap in bacon to make four rolls.
Secure each roll with a toothpick and sprinkle with salt & pepper.
In a fry pan, heat oil, garlic and herbs. When a nice aroma emerges, add asparagus rolls, and after lightly frying, add the wine.
When bacon is cooked through, remove asparagus rolls and garlic from pan and set aside. Add tomatoes and mushrooms to pan and saute for a few minutes until done. Remove from heat.
In a small pan, melt Gorgonzola and shredded cheese into the cream over low heat, stirring continuously. Be sure not to overheat the sauce, as the cream will separate and you will lose the wonderful Gorgonzola aroma!
Once you have a nice sauce, sprinkle with salt & pepper. Arrange asparagus rolls, tomatoes and mushrooms on a plate and top with sauce. Garnish with fresh dill and enjoy!
