Banana Carrot Cake
Preheat the oven to 180 degree C, put margarine into a bowl and mix well until you get a creamy texture. Then add sugar and mix very well.
Add beaten eggs slowly and mix very well, then add in the diced carrot and mashed banana.
Add the flour and baking powder into the bowl, and mix roughly. A powdery texture is ok to finish.
Spread olive oil or margarine on the inside of the cup cake box, then pour in the mixture to half way up the box, avoid over filling. Bake for 20min and remove to a cooling rack.
Note: if the banana used is green and still hard, heat in a microwave for 30sec to soften.
