Basil Chicken Fried Rice

A slightly modified version of the Thai basil chicken fried rice. Use Thai basil and peanut oil to fry, throwing in some serrano peppers and you're there!
- Chicken Thigh (1 pound)
- Onion (thinly sliced) (1)
- Basil Leaves (1 handful)
- Garlic (chopped) (5 cloves)
- Fish Sauce (2 tbsp)
- Oyster Sauce (3 tbsp)
- Sugar (1 tsp)
- Cooked Jasmine Rice (3 cups)
Mix the fish sauce, oyster sauce and sugar together in a dish.
Heat a frying pan with the chopped garlic and a glug of olive oil/peanut oil. Fry till fragrant.
Add in the onions, chicken and previous sauce mixture. If you've got serrano peppers, now is a good time to add them. Fry till the chicken is no longer pink on the outside.
Throw in a handful of fresh basil leaves.
Add in the cooked rice and fry till the sauce mixture is well blended with the rice.
