Good ol' proper Italian beef bolognese. You can substitute the carrots for celery if you like.
- Brown onion (1, chopped)
- Garlic (2 cloves, smashed)
- Bay leaves (2)
- Bacon (4 rashers, chopped)
- Chopped tomatoes (1 can)
- Dry red wine (1 large glass)
- Mince beef (500g)
- Olive oil (2 tbsp)
- Carrots (3, chopped)
Fry bacon till golden in olive oil.
Add onion and garlic. Fry till onions start to soften.
Add beef mince and fry till beef is brown.
Pour in wine and boil until it has reduced in volume by a third.
Turn heat to low. Stir in carrots and chopped tomatoes with the two bay leaves. Cover pot and simmer for 1h till sauce has thickened. Check and stir occasionally making sure it doesn't dry out.
Salt and pepper to taste. Serve with choice of pasta. Optional - Sprinkle a generous amount of Parmesan cheese or tear some basil leaves over.
