Big Bad Cinnamon Rolls
These are almost worth baking just to make the whole house smell of cinnamon!
- Dry yeast (2 1/2tsp)
- Milk (250ml)
- Butter (75g)
- Egg (1)
- Flour (425g)
- Salt (1/4 tsp)
- Caster sugar (75g)
- Ground cardamom (1tsp)
- Butter (for the filling) (75g)
- Caster sugar (for the filling) (50g)
- Ground cinnamon (2tsp)
- Egg (for glaze) (1)
Warm the milk a bit and mix in the yeast.
Soften up the butter and mix that in to.
In a separate bowl, mix flour, cardamom, salt, and sugar.
Stir together milk and flour mix until the dough comes cleanly from the bowl.
Knead for about 5 minutes on a flat surface and leave under cover for 30 minutes at room temperature.
For the filling, stir together softened butter, sugar, and cinnamon.

Roll out the dough into a rectangle of about 40 x 30cm.
Spread the filling on top
Roll the dough up into a cylinder
...and cut it up into slices of about 2 cm.
Put the rolls onto a tray with with baking paper, and squeeze them a bit. Cover and leave for another 20 minutes.
Preheat the oven to 220C and get out another egg and some sugar for the glaze.
Brush the rolls with the egg and sprinkle some sugar on top.
Bake for 12-15 mins and you're done!
