Biksemad (Fried sausage and potatoes)
This is home cooking dish in Denmark. Simple ingredients, simple cooking but it's delicious! Using sausages is a little uncommon but you can use any meat you can find in your refrigerator.
- wiener sausages (approx. 10 (as you like) )
- potatoes (2)
- * Ketchup (3 tbs)
- * Oregano (dry) (1/2 tsp)
- * Salt & pepper (as you like)
- eggs (2)
- onion (1/4)
- olive oil (1 tbs)
- Radish sprouts (as you like)
Cut the onion into thin slices and cut the potato into bite-size pieces.
Add olive oil to the pan and place over a medium heat then fry the vegetables.
Don't be surprised by this picture, I was experimenting with a purple potato this time :)
Cut the sausages into about 1cm each.
Cook the fried eggs on the other frying pan.
Check the potato with a skewer.
Stop heating and add the combined * condiments.
Turn on the heat again and stir ingredients. When it becomes to a boil, stop heating and arrange on the plate. Garnish with fried eggs and radish sprouts to add color.
