Bitter Gourd Tsukudani
Japanese tsukudani is simmered with sweetened soy sauce and is also a side dish. I didn't know that bitter gourd be cooked as tsukudani until now. It ends up with no bitter taste at all. Its so delicious that you have to eat plenty hot white rice.
- bitter gourd (5pcs.)
- ✬soy sauce (1 cup)
- ✬vinegar (1/2cup)
- ✬sugar (2tbsp.)
- ✬sesame seeds (1tbsp.)
- ✬kombu cut into strings (10 cm.)
- salt use for soaking (1/2tbsp.)
Wash the bitter gourd well and remove the seeds.
slice and soak in salted water for 5minutes
strain and blanced with hot water and squeeze well
In a saucepan boiled the✬ingredients for 5minutes and put the slice bitter gourd.
simmer until the sauce evaporates mixing occasionally so as no to be burn.
Put in a tupper and refrigerates.
