Brigadeiro – The Famous Brazilian Chocolate Bonbon
Brigaderio is a traditional sweet from Brazil and it is like a bonbon, or a sweeter truffle. It is not hard to make, but you should make sure you follow the important guidelines in the steps to be successful (stir constantly, use medium heat, etc.) Brigadeiro makes a great filling and top for cakes, brownies, and cupcakes. It also appears as part of many other Brazilian desserts. Makes 30 bonbons.
Background: In Brazil, Brigadeiro is a favorite! Children just love Brigadeiro and it is a must have on their birthday parties! Adults love Brigadeiro too although they say they “make it for the kids”. My son’s birthday was the perfect excuse for me to make this wonderful Brazilian delight!
- Butter (2 Tablespoons)
- Sweetened condensed milk (1 can)
- Unsweetened cocoa (3 Tablespoons)
- Chocolate sprinkles
In a medium sauce pan over medium heat, add the butter, condensed milk and cocoa powder.
Cook on medium heat, constantly stirring. Cook until the mixture thickens and you can see large air bubbles forming on the surface; about 10 minutes (you must be able to see quite a bit of the bottom of the pan.)
Remove from heat and transfer to a plate. Make sure the mixture is really thick before removing from heat. Being able to see quite a bit of the bottom of pan while stirring is the best way to tell the balls will not fall apart on you when rolling them.
Let it cool completely before rolling it. You can even refrigerate it for a couple of hours before.
Grease hands with butter or cooking spray. Take small amounts of mixture (about 1 teaspoon) and roll it until you form a ball. Grease your hands as many times as needed (this will make the work less messy and you will turn out with perfect little balls.)
Roll the ball over chocolate sprinkles and place them on small size candy cups.
Serve it at room temperature or refrigerate until serving.
