Carrot salad with honey vinaigrette
Quick and easy salad great for when you need another side dish! Inspired by the French “carottes rapees” and goes well with all sorts of cuisines.
- Carrot (1/2 medium)
- Vinegar (one that you like) (1 Tbsp)
- Olive oil (1 Tbsp)
- Honey (1 tsp)
- Salt (A pinch)
- Toasted sesame seeds (3 Tbsp)
In a large bowl, whisk together vinegar, olive oil, honey and salt until well combined.
Cut carrot into fine strips using a slicer, etc.
Drain off any excess water from carrots then mix into the dressing.
I used red wine vinegar but it’s great with balsamic and apple vinegar too! I recommend using a decent quality olive oil.
Try adding a bit of Vietnamese fish sauce to the salad and creating a Vietnamese style sandwhich with a baquette.
