Cashew Nut Cookies
Would you believe that Thais call this cookie "Cookie Singapore"??? This name has been called because Thais long ago didn't have tropioca flour and had to import it from Singapore. Of course, an ingredient of these cookies is tropioca flour.
- Wheat flour (1 1/2 cups)
- Tropioca flour (1/2 cup)
- Sugar powder (3/4 cup)
- Margarine (100g)
- Egg yolk (2)
- Salt (1 tsp)
- Vanilla essence (1 1/2 tsp)
- Cashew nuts
Sift two kinds of flour and sugar powder together.
Mix margarine with the flour by hand until blended.
Use any little mold to shape your cookies.
Beat in the vanilla and eggs and mix for 1 minute.
While doing so, preheat oven to 170 degrees C.
Coat each cookie with egg yolk.
Add 1/2 cashew nut to each cookie and coat the egg yolk again on top of cashew nut.
You can make any color of cookie as your wish like pink, purple, yellow or so on ^^
Bake cookie for 15-18 minutes until lightly brown. Let them cool by leaving them for a while before serving or keeping.
Serve your cashew nut cookies on plate.
Or keep them for another time in a bottle or give some for your special person by adding a message tag on it.
