Celery Stew (Khoroshte Karafs)
This dish is mainly made with celery and beef. The taste is sour-salty and even those who don't like celery are able to enjoy this dish. ^^/
Background: I learned this from my mom! ^@^/
- Celery (1 bunch)
- Beef (300 g)
- Onion (1 big)
- Mint and Parsley (50 g each)
- Dried lime or lemon juice (2 Tbsp)
- Turmeric, Salt and Black pepper, (1 tsp)
- Water (4~5 cups)
Chop the onion.
Separate the celery leaves.
Chop the celery into small pieces.
Chop the mint and parsley finely.
Cut the meat into small pieces.
Fry the onion in deep pot for about 5 minutes
Add the meat and fry for few more minutes
Add the salt, pepper and turmeric
After few minutes pour in 4~5 cups of water
Put the lid on and simmer on low heat for about 1 hour till the beef cooks and softens.
In a separate pan, fry the celery for few minutes till the color turns greener
Add the finely chopped mint and parsley and fry for about 10 minutes
Add celery leaves and fry for few more minutes
Pour the vegetables into the pot
Cover the pot with the lid and simmer for another 30 minutes
Add 3 dried limes or 2 Tablespoons of lemon juice. Cook for 15 more minutes
Have it over white rice ^@^/
