Featured Recipe, Jan 31 2012Hot stew is one of the best meals for chilly winter days. Fresh tomatoes and basil add a nice touch of summer.
I read Jamie Oliver's Food Revolution and followed his recipe for this chicken stew. I substituted thyme with basil and used fresh tomatoes on the vine instead of canned tomatoes.
- Carrots (3)
- Onions (2)
- Garlic (2 cloves)
- Tomatoes (4)
- Potatoes (3)
- Button mushrooms (1 handful)
- White wine (2 cups)
- Basil leaves (2 sprigs)
- Chicken thigh fillet (2)
Prep all the vegetables. Chop them up roughly.
Feel free to add/substitute any other vegetables, ie celery or parsnips.
Add a glug of olive oil to a hot pot with the vegetables an cook for about 10mins over medium heat.
Add salt and pepper to taste.
After the onions turn translucent, add in the chicken and cook for about 5mins.
You can add flour at this stage to thicken the stew.
Pour in the white wine till it just covers everything.
Add in the basil leaves and bring the stew up to a boil.
Leave it in a thermal/slow cooker or let it simmer in the pot for 2 hours or more.
Serve with crusty bread!
