Chicken Vegetable Tomato Soup
This soup is simply delicious without any soup stock, since I make use of the natural taste of the ingredients. Enjoy this healthy and nutritiously yummy soup :)
- chicken (150g to 200g)
- red turnip (200g)
- onion (1 (2 for small one))
- sweet potato (200g)
- can of tomato (1 )
- salt and pepper (a little)
- garlic powder (2 tsp)
- dried herb (2 tsp)
- cheese powder (1 tbsp)
Slice the onions. Cut the chicken (remove any skin but keep it for later), the red turnips and the sweet potato into approx 2cm cubes. Heat a pot with 2 tsp olive oil. Put in all the chopped vegetables and chicken and stir fry on medium heat for about 4-6 mins. Add seasoning: salt, pepper, garlic powder and herb.
Next, add 2 to 2.5 cups of water. If there was a chicken skin in step 1, include it for making broth and added flavour. Simmer the soup for about 15 min on medium to low heat with the lid on.
Add the can of tomato to the pot and mix in gently. Taste and season as required. Before serving, take out the chicken skin. Delicious served in a soup mug with cheese powder sprinkled on top, enjoy!
