Chilled Potato Soup
This is so simple, it'll surprise you how good it tastes! You might even say it's a little "fancy," :P It does take some extra time to chill, so just be mindful of that!
- Potatoes (3-4)
- Onion (1/2)
- Butter (1 Tbsp)
- Bouillion cube (1 cube)
- Water (2 cups)
- Milk (2 cups)
- Salt (a little)
- Pepper (a little)
- Parsley (To taste)
Cut potatoes and onions into thing slices.
Melt butter in a pot.
First, saute onions until softened. Next, add potato and lightly saute, stirring until coated in the butter.
Add water and the bouillon cube. Simmer until potatoes are soft.
Remove from heat and let cool for a couple minutes before processing in a mixer or food processor.
When the mixture is smooth, return it to the pot. Add milk, and adjust taste with salt and pepper. Bring to a simmer, then remove from heat and let cool a few minutes before chilling in the refrigerator. Pour into serving bowls when completely cooled and garnish with parsley. Enjoy!
