Chocolate Chip Banana Cookie Cake
This is a fusion of all of the best things in life. Banana bread, cake and chocolate chip cookies PLUS no washing up! Because, that's right, this cookie/cake/bread is made in one 'bowl' (a cast iron skillet). The mixing and baking is all done in the skillet!! This is perfect for 1 or 2 people, satisfying late night cravings and for anyone who doesn't like washing dishes!
- Butter (1/2 stick)
- Brown Sugar (1/2 cup)
- Egg (1)
- Vanilla extract (1 teaspoon)
- Mashed banana (1)
- Ground cinnamon (1 teaspoon)
- Flour (1 cup)
- Salt (1/4 teaspoon)
- Baking soda (3/4 teaspoon)
- Chocolate chips (1/2 cup)
Preheat oven to 180C
Prepare 10cm cast iron skillet
Set skillet on stove and melt butter
Whisk melted butter with brown sugar.
Take off heat and let cool for a few minutes before whisking in the egg.
*if it's too hot your egg will turn into scrambled eggs!
Add mashed banana and cinnamon. Mix well.
Add dry ingredients (flour, salt, baking soda) and mix well!
Add in chocolate chips!
(Feel free to add nuts of your choice (walnuts perhaps), dried fruits or even a splash of bourbon!)
After mixing well and smoothing out the top, place in oven and bake for around 12~15 minutes!
Voila! Serve with ice cream for added deliciousness!
