Featured Recipe, Feb 21 2012We all love chocolate muffins- and with a choco-licious burst of flavor from a dash of chocolate liqueur, you'll be in heaven!
Preheat the oven to 180 degree C. Put the margarine into a bowl with sugar and mix together well.
Add beaten eggs slowly and mix very well, then add the chocolate liqueur, the roughly chopped walnuts and chocolate to the mix.
Sieve flour and baking powder, and add them into a bowl, mix roughly - a powdery texture is ok.
Spread olive oil or margarine on the inside of the cup cake box, or use silicon cups. Then pour in the mixture to half way up the box, avoid over filling. Bake for 15min and remove to a cooling rack - the muffins are best served/eaten warm. If completely cooled, heat in microwave for about 30 sec and is super yummy with vanilla ice cream.
Note: I use GODIVA's for the chocolate liqueur.
