Colorful pasta salad
Simple, fuss free, healthy pasta salad that will whet the appetite of your guests. Hardly any cooking is involved except for saute-ing the mushrooms and cooking the pasta. Great for parties or light lunches.
- Large Spiral Pasta (375grams (1 packet))
- Green Pepper (1)
- Red Pepper (1)
- Yellow Pepper (1)
- Button Mushrooms (1 Packet)
- Sun Dried Tomatoes (50 grams)
- Coarse Pepper (To Taste)
- Sea Salt (To Taste)
- Olive Oil (To Taste)
- Organic vinegar (Apple / palm / whatever light colour vinegar you have) (To Taste)
- Sherry Wine (For mushrooms) (2 tablespoon)
- Garlic (For mushroom saute) (1 teaspoon)
- Italian herbs (To taste)
Slice red, green and yellow peppers really thinly. As thin as possible. Set aside. Peppers don't need to be cooked.
Slice each mushroom into 4 parts (approximately). I thought that this size made it really nice for saute-ing.
Saute mushrooms in pan. Try to dry your mushrooms a bit before sauteing because it gives out a lot of moisture. Fry up some garlic, throw mushrooms in. Put salt, pepper, italian herbs and sherry wine when mushrooms are almost cooked.
Cook pasta and drain as per instructions on packaging.
Combine all ingredients (peppers, pasta, mushrooms, tomatoes + seasoning - salt/pepper/vinegar/herbs/oliveoil) in a large bowl and toss. Do it in batches so that you can season the salad and mix them well. Break up the sundried tomatoes and mix them in.
Once the pasta is tossed well, put it in a nice bowl and serve! If you want to make the salad a bit fancier, feel free to add in some smoked salmon or bacon bits (less healthy) for that extra kick. Enjoy!
