A must-have with pitas and falafel, but also the perfect companion for grilling meat & vegetables, or even salads! Regular plain yogurt works fine, but using Greek yogurt or strain regular yogurt for a thicker, creamier texture. If you have time, give it a few hours to let the flavors really soak in ;) You can play with the flavor by adding fresh mint, a few sprinkles of cumin, or extra cayenne.
- Plain yogurt (120 ml (8 Tbsp))
- Cucumber (1 small or 1/2 large)
- Garlic (1 small clove)
- Lemon juice (2 tsp)
- Salt (1/2 tsp)
- Pepper (To taste)
- Olive oil (Just a bit to drizzle over )
- Cayenne pepper, cilantro, mint (optional) (For garnish)
Remove seeds (if any) from cucumber and chop finely. Squeeze lemon for juice.
Mince garlic as finely as possible.
In a bowl, mix cucumber, garlic, yogurt, lemon juice and salt. Adjust lemon, salt, etc. to your liking if needed. You can use right away, but if you let it sit in the refrigerator for a couple hours, it will be more flavorful.
When ready to serve, sprinkle over just a bit of black pepper, cayenne pepper, fresh cilantro etc. if you like. Drizzle over some olive oil and it's ready to go!
Goes awesome with falafel, grilled veggies, and all kinds of meat!
