Easy & Healthy herb based potato salad
Who says potato salad can only taste good if it has loads of cream, butter and mayo? Be surprised by this herb based potato salad that is very simple to put together, healthy and yet so yummy. Great for parties and potlucks. :)
- Olive Oil (3/4 bowl)
- Lemon Juice (1 lemon)
- Lemon Zest (1.5 teaspoon)
- Celery (2 sticks)
- Yellow Onion (2 pieces)
- Fresh Basil (1/2 cup)
- Fresh Mint (1/2 cup)
- Fresh Parsely (1/2 cup)
- Small / Baby potato unpeeled (1 kg)
- Sea Salt (To taste)
- Grounded Black Pepper (To taste)
- Garlic (5 cloves)
Bring a pot of salted (I used 1 teaspoon) water (1 litre) to boil. Add in the baby potatoes and cook till tender but not overly soft. Approximately 20 minutes for me.
In the meantime, prepare your ingredients. Zest and juice your lemon. Chop up your onions and garlic. (these 2 ingredients do not need to be too fine)
Combine lemon juice, lemon zest and olive oil in a small bowl. Add in salt and pepper to season the mixture. Whisk them together.
Chop up your celery into cubes. I made them into the size above.
Chop up your herbs together. (It's easier to use a food processor or you can do the old school way.)
Prepare your dressing: Put onions, garlic, celery, herbs in a bowl. Add in some salt and pepper into the mix. Pour in the lemon olive oil mix and give it a good stir.
Potatoes should be cooked now. Take them out, drain and let them cool for 10 minutes. Quarter the potatoes.
Put dressing in a bowl and add some of the potatoes into the dressing. Do it in sections so that we can get the potatoes well tossed with the dressing.
Mix well and try to be gentle though so that you don't accidentally detach the yummy skin from the potato. Feel free to add in more salt and pepper to taste.
Serve at room temperature. Enjoy!
