Eggplant garlic dish ( Mirza Ghasemi )
This dish is originally from the north part of Iran near Caspian Sea. The climate is pretty humid and hot in summer and people love the mild taste of eggplant and tomato accented with the flavor of garlic and turmeric in this simple dish! P.S."Mirza Ghasemi" is a perfect dish for vegetarians! ENJOY it!!^;^/
- eggplants (6 pieces,small )
- garlic (4 cloves)
- tomato (2,medium size)
- egg (2 pieces)
- turmeric (1 tablespoon)
- cooking oil (3 tablespoons)
- water (150 ml)
- tomato paste (2 tablespoons)
- salt&pepper (1 teaspoon each)

cut the heads and make random holes in the eggplants with a fork.
grill the eggplants on the fire.
watch your fingers!!;-]
crush the garlic cloves with the back of a knife. It brings out the taste and flavor of garlic!
chop the garlic.
boil tomatoes for about 5 minutes while the eggplants are grilling.
put them in cold water. the skin comes out easily!
eggplants are grilled and ready to peel the skin.
peel the skin completely and put them in a strainer for about 5 minutes till the eggplants water drains completely.
chop the tomatos.
chop the eggplants.
pour cooking oil in a frying pan.
fry the garlic for couple of minutes.
add the eggplants and fry for about 5 more minutes.
add turmeric and mix .
add chopped tomatos and mix.
pour in the water and mix.
let the mix cooked for about 10 minutes.
add salt and pepper after 10 minutes.
break 2 eggs like THIS!^@^/
put the lid on and wait for about 3 minutes. If you don't like half-cooked eggs,you can cook longer!;-]
READY TO SERVE!^@^/
you can have "Mirza Ghasemi" with rice or pasta.
