Fresh Israeli Salad
This is a delicious light salad great for the summertime or as a topping on a falafel pita sandwich (A recipe that is in my profile too). Tair was nice enough to teach me this great recipe in a fun cooking class taught in her home. The salad is definitely influenced Mediterranean & Greek cuisine, which Tair was happy to explain the reason/history behind. Hope you enjoy!
- Tomatoes (3-4 )
- Cucumber (3-4)
- Onion (1 medium)
- Garlic (1 clove)
- Lemon Juice (1/2 lemon)
- Salt & Pepper (to taste)
- Olive Oil (3 tbsp)
Dice up your cucumber into about 1/2 cm cubes. Maybe a little bigger.
Then cut up your tomato into a similar size.
Your salad should be about equal parts tomato and cucumber.
Your onion gets the same treatment as the tomato & cucumber.
Put them all in a bowl and give them a good mix!
Then squeeze your lemon, add your olive oil, and your salt & pepper.
Oh yeah and a very finely diced clove of garlic :D
Give it a good mix again. This is probably best to make a little beforehand and allow to marinate & remix a few times.
*This works as a great topping for a falafel sandwich, which there's a recipe for in my profile :)
