German Cucumber Salad | Gurkensalat mit Dill
German style cucumber salad is heavy on the vinegar so the vegetables get marinated and soak up loads of flavor. This is super refreshing during the summer and great for picnics and BBQs ;) I could probably eat the entire bowl myself!
Background: One of my favorite recipes from my mom that we always ate in Germany. She used to make huge bowls of this in the summer and everyone would end up having 2-3 bowlfuls!
- Cucumber, sliced thinly (2)
- Tomatoes, cut in wedges (2-3)
- Green bell pepper, diced (1)
- Fresh dill, chopped (a small handful)
- German, Dijon or whole grain mustard (2-3 tsp, more or less to taste)
- Apple cider vinegar (8-10 Tbsp)
- Salt & pepper (To taste)
Ingredients! Two large cucumbers will do or 3-4 small ones like I have here. Quoting my mother about the mustard: "No French's Yellow Mustard crap. Must be a German mustard or Dijon" :P (I used a mix of whole grain and Dijon)
Slice cucumbers as thin as possible (a slicer/mandolin works great if you have one). Chop the dill and bell pepper. Cut tomato into wedges.
Put all vegetables in a bowl and mix with mustard, vinegar, salt and pepper. The vinegar might seem too strong at first but it will get milder after marinating.
Let marinate in the refrigerator for 30 minutes before serving.
Great with sandwiches, bread, or a side dish with basically any meal.
