Recipe is from Frankie Magazine's "Sweet Treats" book. Makes a lotta lotta cookies! In case you're wondering, the cat cookie cutters can be purchased from MUJI.
- Softened butter (140 g)
- Brown sugar (1/2 cup)
- Golden syrup (1/4 cup)
- Egg (1 no)
- Plain flour (2 cups)
- Self-raising flour (1/4 cup)
- Ground ginger (3 tsp)
- Ground cinnamon (2 tsp)
- Ground cloves (3/4 tsp)
- Ground nutmeg (3/4 tsp)
- Bicarbonate of soda (1 tsp)
In a bowl, sift the self-raising flour + the plain flour into a bowl. Set aside.
Cream butter + brown sugar till it looks like...
this - light & pale.
Add golden syrup + egg.
Fold in the spices, the bicarbonate of soda & the flour.
Lightly flour table top, plop mixture onto table and knead.
It should then look like this. Back into bowl.
Cover with plastic bag.
Into the fridge for at least 30 mins.
Flour table table. Take mixture of out fridge and onto table. Using a rolling pin, roll till about 4 mm in thickness.
Flour cutters and then begin to cut out the shapes.
Plop onto tray. Into oven for 10 mins. 180 degrees.
And then you'd get a trayful of cats!
