Grapefruit, Citrus, Cottage Cheese Bowl
This is more a technique than a recipe, but you'll end up with a delicious all around healthy snack or meal, depending on how much cottage cheese you use -- This is great for athletes with all the protein from the cheese (casein protein to be exact, which is slow digesting and keeps you full). If you're looking for something a little sweeter you can add canned mandarin oranges too!
- Grapefruit (1 )
- Orange (1)
- Cottage Cheese (1/2 Cup - 1 Cup)
Pick out your favorite citrus, hopefully including a grapefruit.
Small baseball'ish size grapefruits were on sale this time, but I usually use softball size ones.
Slice off their tops and bottoms.
Make sure your cut leaves you with a nice view of the inside of the fruit.
Make your first side cut, making sure to take off all of the peel and the white parts of the fruit.
It should look like this.
Usually the first cut is the widest one.
Keep going, I usually take about 6-9 cuts per fruit.
(6 when I'm feeling lazy)
Then you start cutting out the slices of fruit by cutting right on the side of the membrane/inside skin.
Do one piece at a time and pop them out into a bowl as you go.
There's a lot of good juice in there, so grab what's left of the grapefruit or orange and squeeze it into your bowl.
You'll also end up with a lot of seeds if you didn't buy seedless (I'd recommend seedless).
Now you've got your bowl of delicious fruit.
I usually do a little designing/arranging of just the slices sitting on top at this point.
Get your favorite cottage cheese out now and spoon it out on top.
