This is my favorite salad in early summer. The recipe is originally from Alice Water's book, "The Art of Simple Food".
- Cherry tomatoes (5 to 8)
- Cucumber (1 or 2)
- Red onion (Half)
- Olives (8 to 10)
- Feta cheese (as you like)
- Red wine vinegar (2 tea spoons)
- Lemon juice (1 tea spoon)
- Oregano or Parsley (2 tea spoons)
- Olive oil (6 table spoons)
- Black paper (as you like)
Cut cucumbers into round slices thick, toss with salt, and leave them for 15 minutes to sweat.
Cut tomatoes into quarters of half depends on the side.
Slice onion thin and sink in water for a while.
Make a vinaigrette by mixing wine vinegar, lemon juice, oregano, paper and olive oil.
Mix cucumbers, tomatoes, and onions. Taste and season with salt if needed. Rinse and add olives.
Toss vegetables with the vinaigrette, taste before adding all of the vinaigrette to find your favorite balance.
Dish up as you like !
