Herby Oven-Roasted Fish and Potatoes
Homemade herb bread crumbs is the secret that makes this so delicious. When I invite my friends for dinner, I often make this dish. It's great for when you have people over!
- horse mackerel or other white fish (6 mackerel or 2 servings of other fish )
- potatoes (2)
- broccoli (1/2 head)
- olive oil (4 Tbsp)
- salt and pepper (a little)
- * bread crumbs (1 cup)
- * grated cheese (1 Tbsp)
- * chopped rosemary (1 Tbsp)
Remove the head and innards from the horse mackerel, wash with water and drain. Cut potatoes into about 1cm slices and chop the broccoli into smaller pieces. Boil potato and broccoli until slightly soft (but still a little firm). Drain and set aside.
To make herb breadcrumbs, put bread crumbs, cheese and rosemary into a bowl and mix well (you can also use a mixer).
Preheat the oven to 200 degrees C. Spread out the mackerel, potatoes and broccoli in oven tray and season with salt and pepper. Sprinkle on the breadcrumbs and drizzle on some olive oil.
Bake for 15 min, or until top becomes golden brown.
