Really easy meal, if you've got some kimchi in the fridge. Perfect on a cold day. Usually served with rice. Kimchi recipe here: http://cookmap.com/en/recipes/kimchi--2
- kimchi (2 cups)
- Pork belly, sliced (300g)
- Korean hot pepper flakes (1 tsp)
- Korean hot pepper paste (2 tbsp)
- Sugar (1 tsp)
- Shiitake mushrooms (3)
- Firm tofu (half a block)
- Water (1 litre)
Put kimchi, sugar, hot pepper paste, hot pepper flakes, mushrooms and pork belly in a heavy pot.
Add water and bring to a boil. Cook for 30mins, add tofu slices. Cook for another 5 minutes.
Add salt to taste if needed. Serve with rice!
