Mango Sticky Rice
Th

Preparations

  1. Step 1

Soak your rice for at least one hour and up to five hours. If you forget about it and soak it too long like for a day or more, it ferments and gets gross, lesson learned!

  2. Step 2

Drain your rice. Steam your rice using your preferred method, whether it's a Thai Sticky Rice Steamer or using the splatter guard method like I do.

  3. Step 3

I use a saute pan, splatter guard, and put another pan on top and it works for me!

If you try that method, fill a saute pan, or pot with water until it's about three inches below the top of the pot. Bring it to a boil....

I use a saute pan, splatter guard, and put another pan on top and it works for me!

If you try that method, fill a saute pan, or pot with water until it's about three inches below the top of the pot. Bring it to a boil....

  4. Step 4

Then place the splatter guard on top of the pot and spread out the rice in a thin layer.

  5. Step 5

Place another pot or bowl on top of the splatter guard so it covers the rice, but doesn't touch it.

  6. Step 6

Let the rice cook for about 20 minutes or so, until it's sticking together and cooked through. I like to taste it to see if it's reached the soft, sticky texture.

  7. Step 7

While the rice is cooking, start on the coconut sauce you will mix into the rice. Place the 1 cup of coconut milk, 1/3 cup of sugar and 1/2 teaspoon of salt in a small pot, and put on medium low. Stir it a bit until the sugar is dissolved.

  8. Step 8

For the Topping: I also like to make a thicker coconut sauce topping to put on top of the rice and mango. You can make that the same time you are doing the other sauce.

  9. Step 9

Place the 1/3 coconut milk, 3 teaspoons of sugar and 1/4 teaspoon salt in another small pot on medium low and cook until the sugar is dissolved.

  10. Step 10

Mix the tapioca starch or corn starch with the water until no more lumps remain. Then add the starch to the pot and stir until the sauce has thickened.

  11. Step 11

Once the rice is cooked, place it in a bowl or dish of your choice. Pour the larger quantity of coconut sauce into your sticky rice and stir. You will see the rice start to absorb it. Put a cloth over the top and let it rest for about 30 minutes to let the rice absorb the sauce.

  12. Step 12

Place the sticky rice, and mango on a plate and add the coconut topping to your heart's delight. Enjoy!

  13. Step 13
