Mashed Potato Pancakes
Just mix the leftover mashed potato with the egg, herbs or greens. Season with salt and make small pancakes you fry in oil on both sides until nice and crispy.
I guess you could add anything from mince meat, bacon, shrimp and other seafood, etc. great way to use up leftovers!
