Myoga and Cucumber "Sunomono" Salad
Myoga is a great compliment to cucumber! Super easy to make and especially delicious for the summer :) Adding wakame seaweed is also very tasty. *Translator's note: Myoga is like a cross between ginger and a mild onion. If you live in Japan where it can be easily found or lucky enough to have a market that sells it nearby, then give this a try! "Sunomono" is a simple vinegar-based salad.
- Cucumber (2 small)
- Myoga/myouga (2 )
- Vinegar (rice vinegar, etc.) (3 Tablespoons)
- Sugar (1 teaspoon)
Slice cucumbers very thinly, and cut myoga into thin matchstick-sized slices. Add cucumbers to a bowl and sprinkle with just a small bit of salt.
Mix vinegar with sugar in another bowl. If you would like a sweeter flavor, adjust taste by adding more sugar.
By now, some water should have seeped out from the cucumbers. Gently squeeze the excess water out with your hands. Add the cucumbers, myoga and vinegar dressing and mix well.
It's all ready to go! It can be eaten right away or kept in the fridge for later :)
