Pesto Penne Pasta (with Bacon!)
If you look in my kitchen/profile you'll find a great fresh pesto recipe that works perfect for this. My recipes could probably look more unique from each other if I didn't throw fresh tomatoes on top of everything, but I love them too much :)
- Pesto (1/4 cup'ish)
- Penne (About 1 package (600 g))
- Bacon (To Taste! (maybe about 4 strips))
- Onion (1 Medium)
- Garlic (2 large cloves)
- Coarse Ground Pepper (To Taste)
- Tomato (1 Large)
- Parsley or Basil (For Garnish)
- Parmesan (To taste)
Cut up your bacon into about centimeter size chunks.
(You'll want to start your water boiling soon too!)
Then dice up your garlic.
And then slice your your onion, you'll want more then pictured.
Also get your pepper seeds ready to be crushed!
You can just roll the back of a spoon on them, pressing with your palm.
Add your bacon and try to get some grease out of it before adding the other ingredients.
(Japanese bacon has little fat, I felt pretty guilty adding olive oil to bacon!)
Add your pepper.
And the onions and garlic.
Go pick a tomato and then cut it up into cubes about a cm in size while your
A good trick to help cutting tomatos is putting them in the freezer for 5-10 minutes, it helps the inside solidify a little.
I decided to add a little parmesan at this point.
Cooked a little more, then covered, and let it rest on low heat.
Once your penne is ready add your pesto.
And give it a good stirring.
Then add your bacon and delicious stuff.
Add your tomatos on top & your green garnish last.
Serve with a side of pesto on the table so your guests can enjoy the full flavor!
