Rice "Gnocchi" with Shrimp and Vegetables
This is a Chinese dish I had when I went out to a Chinese restaurant in Milan with my classmates :) *Translator's note: rice gnocchi is also called rice cakes or rice dumplings, which you can probably find at Chinese/Asian market.
- Carrots (1)
- Shrimp/prawns (about 10)
- Zucchini (1)
- Rice Gnocchi (or Rice Dumplings/rice cakes) (about 20)
- Oyster sauce (1/4 cup)
- Chinese stock (1/4 cup)
- Potato starch (1 tsp)
Cut carrot and zucchini into strips. Clean shrimp and remove their tails.
Boil carrots in water until starting to soften.
Add zucchini along with the carrots.
In a glass or bowl, combine Chinese stock and oyster sauce. Add salt and pepper and lastly the potato starch.
Remove zucchini and carrots from boiling water when done. Boil shrimp until they turn color.
Soak rice dumplings in water in a bowl.
Remove shrimp when done, then add rice gnocchi and boil until soft.
In a separate pan, combine carrots, zucchini, shrimp, and gnocchi.
Cook briefly, adding the mixed sauce so it evenly coats ingredients.
