Rice with chicken
This is a very typical Peruvian dish. It's rice cooked with chicken, vegetables and seasoned with spices, among them the indispensable coriander.
- chicken pieces (6)
- shortening (1/3 cup)
- minced onion (one)
- minced garlic (one teaspoon)
- minced coriander (one cup)
- minced chile (optional, as you like it)
- green chile strips (2)
- cooked beans (250 gr)
- salt, pepper, cumin (as you like it)
- water (3 cups)
On hot shortening, cook the chicken. When done, take away from the stove.
With that same shortening, fry coriander, onion, garlic, chile, salt, pepper and cumin.
Add water and when it starts boiling, add the rice. It has to be clean and dry.
Cober the pan and have it cooked 15-20 minutes. Add the beans.
