Descale salmon skin. Salt salmon and pat with flour.
Cook salmon slices over medium heat in olive oil.
Pour sake over cooked salmon. Cook for 1 minute on each side. Set salmon aside.
Add soy sauce, mirin and sugar to the pan. Bring to simmer. Stir till sauce starts to thicken, put salmon slices back in pan. Coat salmon in sauce and cook till sauce is sticky.
Garnish with bits of seaweed!
