Semi-dried Tomatoes in Oil
Wash tomatoes well and cut in half. Soak up the excess moisture from the inside of the tomatoes with a paper towel. Cut garlic into thin slices.
Spread a cookie sheet on to a baking pan and lay out tomatoes on top.
Preheat oven to 100C/210F and let tomatoes bake slowly for 2 hours. Let cool for a few minutes after baking.
They should look like this.
Put tomatoes and garlic into a jar and fill with enough olive oil to cover. Wait at least 1 day before using.
One way to use them is by adding to bagels, like this.
