Shumai with Eggplant
This is siomai (or shumai) which I mixed eggplant in with the ground meat. Eggplant goes very well with pork!
Background: Eggplant is great with ground meat so I used the combo in shumai.
- ground pork (200 g (7 oz))
- eggplant (１)
- shumai (shao mai) dumpling wrappers (16 sheets)
- ★ flour (1 tablespoon)
- ★ grated ginger (1 teaspoon)
- ★ salt and pepper (a dash)
Chop the eggplant finely and dust with flour. Add ground pork, grated ginger, salt and pepper and mix.
Wrap the pork mix in the shumai wrappers. Steam for ten minutes.
