Simple and fast pizza dough and tomato sauce

A quick and simple recipe for pizza dough and tomato sauce, a solid base for all kinds of fun and delicious pizzas.
- All Purpose Flour (500 gr)
- Warm Water (330 ml)
- Sugar (½ tbsp)
- Salt (½ tbsp)
- Dry yeast (7 gr)
- Can of Pomodoro Whole Tomatos (400 gr)
- Garlic (1 or 2 cloves)
- Fresh basil (handful)
- Salt & Pepper
- Extra Virgin Olive Oil
Sieve the flour into a bowl with the sugar and the salt.
Put the warm water together with the dry yeast and dissolve. Leave to stand until the yeast activates and the water becomes foamy.
Put the flour into your mixer along with the warm water.
Mix until you get a firm springy dough, beat it up to 10 minutes.
Put the dough in a big bowl, dust with flour and put a plastic wrap on top. Leave at room temperature for 2-24 hours.
Pick the leaves of the basil and cut into rims. Chop the garlic and the basil stalks finely and put in a pot with the olive oil. Fry gently until the garlic starts to turn golden. Put in the tomatoes, basil and season with salt and pepper. Break the tomatoes up and simmer for 20 minutes or so.
Get out your dough and split into four even sized balls. Press each out into a nice thin pizza base.
Put a few spoons of your tomato sauce onto the pizza dough and you are good to go.
Put on your toppings of choice. Here I have mozzarella cheese, topped by anchovies, parsley and capers.
Bake at 200°C for about 15 minutes or until the cheese turns golden brown.
