Simple Spinach Vinaigrette Salad
A great simple starter salad to go with any Italian style dinner, or dinner in general. Feel free to change up the dressing, although I like Vinaigrette since it's healthier than many of the creamy (mayonnaise style) dressings that are also very delicious.
- Spinach (6-8 Bunches)
- Tomato (1/2 (Large))
- Onion (1/4)
- Mushrooms (4-6 )
- Balsamic Vinaigrette Dressing (To Taste)
- Coarse Ground Pepper (To Taste)
- Ice Cubes (4)
Wash & clean all your ingredients. Remove all the stems from your mushrooms and spinach.
I've heard that you don't need to wash mushrooms, I still do for some reason.
Get your spinach into a manageable pile on your cutting board.
Slice it 3-6 times depending on how big the leaves are.
Mine were pretty big in this case.
Slice your tomato kind of like a sunrise pattern, so that all the slices will end in a point.
Then slice it one more time length wise.
*Tip: Cold tomatos are much easier to slice and work with. Maybe even put it in the freezer for 5-10 minutes to prep it.
Slice up a 1/2 of an onion in as thin of strips as possible.
Your cuts should go from base to top, not sideways across the onion's "waste"
Put your onion strips into a glass of ice water for a few minutes.
This is a great trick that a friend taught me to make the spiciness of an onion milder, while making it even more delicious.
Get your mushrooms and clean out any remaining bits of the stem.
Slice them up in about 1/4 inch thick pieces.
After slicing then crumble them into smaller chunks with your fingers to give them a more natural look.
First place your *spinach into your serving bowl.
Next the tomatoes go around the outside base of the leaves.
Then sprinkle your mushroom crumbles around the outside of the base.
Think volcano ;)
*Spinach Tip: Lift the leaves and drop them a couple times after putting them in the bowl. You want them to be light and airy.
Just about finished! Grab your onions out of your ice water and give them a couple of shakes. Then lightly place them on the top of your volcano… salad…
Put the dressing on the table so everyone can enjoy the salad just as they like.
