    Anastasia As a Singaporean, I am sad to say that I've not yet tasted this dish as yet. So...am wondering, what's the purpose of frying the chicken in the paper pockets? Do they help retain the moisture in the chicken?

    Miles Hi Michele. Yes, the chicken should be very soft and moist if you make this. The paper pockets also seem to help infuse the garlic and ginger flavours more than I would expect. They also make a nice talking point when you lay them out on the table :)
