Somen Noodle Stir Fry with Mackerel and Miso
This is a healthy somen recipe with minced mackerel. The miso gives it a touch of sweetness. Kids will love it!
Background: I came up with this somen noodle stir fry after making mackerel soboro (minced mackerel) in my kitchen.
- Mackerel (1 fillet)
- Ginger (1 small chunk)
- Onion, finely chopped (1/2)
- Egg (1)
- Somen noodles (2 to 3 servings)
- Sesame oil (1 Tbsp)
- Salt and pepper (a pinch)
- * Sake, Mirin, Miso, Sugar (1 Tbsp each)
- * Soy sauce (2 Tbsp)
Remove the bones from the mackerel and chop it along with the ginger until it's finely minced. Season with salt.
Heat sesame oil in a frying pan and cook the onion and minced mackerel. When everything is cooked through, add the starred ( * ) ingredients and simmer until the liquid is nearly gone.
While the fish is cooking, boil the somen noodles. Rinse with water and drain well.
Add the somen into the pan along with some more sesame oil. Stir fry on high but do not over mix or the somen will get too soft and sticky.
Season a beaten egg with salt & pepper and pour over the noodles. Turn off heat and let the egg slowly cook as the pan cools down.
Once the egg is cooked through, mix lightly. Season with shichimi pepper if you like.
