Super easy and useful for making a lot of cook-ahead side dish when you have lots of eggplant. It's also delicious after cool it down in fridge.
- Eggplant (5)
- soy souce (2tbsp)
- Mirin (sweet cooking rice wine) (3tbsp)
- Cooking Sake (3tbsp)
- Hot pepper (little)
- salad oil (3tbsp)
- Green onion (little)
Hull eggplants, cut them into round slice,and immerse in ice water.
Heat the cooking oil and saute eggplant lightly.
Add ■■Soy sauce and sliced hot pepper and cook them over medium heat until almost no liquid remains in pan.
Add sliced green onion for decoration.
