Spinach and Shrimp Greek Salad
A simple and healthy salad which I spooned into little wanton skin cups for a party!
- Spinach (5 cups)
- Butter beans (1 can)
- Cooked shrimps (1 lb)
- Red pepper (1)
- Chicken Stock (1/2 cup)
- Balsamic Vinegar (2 tbsp)
- Onion (1)
- Garlic (4 cloves)
- Feta cheese (small wedge)
Heat olive oil in a pan. Stir in minced garlic, chopped onions and pepper. Fry till fragrant. Add in balsamic vinagar.
Pour in chicken stock and simmer for 2 mins. Add in butter beans.
Stir in spinach and fry till leaves wilt.
Remove from heat and stir in shrimps.
Top with crumbled feta and serve!
Alternatively, fill little wanton skin cups with salad and serve as party finger food!
