Spinach Pumpkin Seed Energy Balls
I wanted to experiment a bit with my energy balls, I wanted something green in them :) I added fresh spinach and it was was really delicious. You can't taste the spinach, but it's there and adds good nutrition.
- Mixed nuts (6~7 tbsp)
- Pumpkin seeds (6~7 tbsp)
- Dates (6~7 tbsp)
- Spinach (A handful)
- Cocoa (3 tbsp)
- Salt (A pinch)
Mix all ingredients in a blender. If the mixture seems too dry, mix in a little water.
Roll dough into balls and dip the balls into pumpkin seeds. (Store in the refrigerator.)
